What is Sodium Alginate & PGA

Sodium alginate, the neutral salt form of alginic acid, is created when sodium ions bind to the carboxyl groups of the alginate polymer.It is soluble in water but it becomes insoluble at low pH or at high concentrations of calcium as alginic acid or calcium alginate are formed.
Propylene Glycol Alginate (PGA), it is made by esterification of the carboxyl groups in alginic acid. It does not gel with polyvalent cations and can be dissolved even in acidic foods, remains stable within a pH range of 3–5, resulting in thickening and stabilizing effects.

Alginate beads
Alginate beads are created by exploiting alginate's unique ability to undergo instantaneous gelation when exposed to calcium ions. This occurs when an alginate aqueous solution is dripped into a calcium-ion rich solution (such as calcium chloride or calcium lactate). Upon contact, immediate gelation occurs at the solution interface.
The droplets maintain their integrity due to increased viscosity, preventing diffusion into the calcium solution. Surface tension then shapes the droplets into perfect spheres as gelation completes. For colored beads, dyes can be incorporated into the alginate solution. More sophisticated structures can be achieved using specialized double-nozzle systems that simultaneously dispense both alginate and core liquids, creating beads with liquid centers and gelled exteriors.

When alginate is mixed into a calcium solution, it forms a gel with a long, noodle-like shape. To create artificial shark fins, this gel is shaped into a spindle form. These imitation shark fins have been on the market for more than three decades and have gained global popularity.
