What is Carrageenan

Carrageenan, a hydrophilic colloid derived from certain species of red algae and seaweed, consists chemically of sulfated polysaccharides. These compounds are formed by calcium, potassium, sodium, and ammonium salts of galactose and its dehydrated form.
