Hydroxypropyl Methyl Cellulose (HPMC), is a non-ionic mixed ether produced by chemically modifying natural plant fibers. It appears as a white powder, swells in cold water to form a transparent colloidal solution, and possesses multiple functions including thickening, film-forming, water retention, binding, and emulsifying stabilization.

This is one of the most widely used fields for HPMC, where it typically serves as a key additive in dry-mix mortars.

Specific Applications: Commonly used in tile adhesives, cement mortars, putty powders, self-leveling compounds, and exterior wall coatings, helping to extend open time and prevent cracking.

Quality Improvement: It enhances the water-holding capacity of dough, improves the volume and texture of baked goods such as bread and mochi, while inhibiting starch retrogradation to extend shelf life.

Healthy Oil Reduction: Utilizing its excellent film-forming properties, applying HPMC to the surface of foods like French fries and fried chicken creates a physical barrier during frying, significantly reducing oil absorption (studies have shown it can reduce total polar compounds by 16-22%), allowing for healthier eating.

HPMC is also widely used as a stabilizer in products like non-dairy creamer, jams, and ice cream, or as a partial substitute for batter.
